Favorite Passover Recipes

Typical and Delicious Charoset

Ingredients

2 cups chopped apples
2 cups chopped walnuts
2 teaspoons cinnamon
¼ cup sweet red wine
Preparation
Combine and refrigerate.

Charoset from Yemen
2/3 cup dried Mission figs
2/3 cup dried apricots
1/3 cup pitted dates
1 1/3 cups walnuts, finely chopped, toasted, and cooled
1/4 cup sweet red wine
1/4 teaspoon cinnamon
1/4 teaspoon cayenne
1/8 teaspoon ground ginger

Preparation
Pulse together figs, apricots, and dates in a food processor until finely chopped, then transfer to a bowl and stir in walnuts and wine. Sprinkle spices evenly over mixture and stir until combined well.
(Can be made 3 days ahead and kept, covered, at room temperature.)

Matzo Brie
Have it for breakfast, or have breakfast for dinner!
Ingredients
6 sheets of matzo
3 eggs
warm water

Preparation
In a medium bowl, break matzo into small pieces.
Fill bowl with warm water and let matzo soak for a few minutes to soften slightly.
Drain.
Add three eggs to matzo and stir until blended.
Preheat a large frying pan prepared with non-stick spray or margarine. Spoon matzo mixture into the pan and spread evenly. Fry just until lightly browned on each side.
Serve with sugar, jams or syrup.
